In the Netherlands we prefer to eat a sandwich with cheese at lunchtime. But what to do with all that old bread?
Erika Hirose developed a 'kit' to turn old bread into Japanese miso. Tonight, she shares her knowledge and shows that our leftover bread can last another round. Marcin Cieślak is interested in the fermentation process in a different way. He uses sensors to collect data from the miso-in-formation, which he then converts into sound (or sonification). Guided by this duo, this Waag Open edition you can get to work making miso and music yourself.
Bring your old, leftover bread. Leftover potatoes, pasta, rice or noodles are also welcome.
